Bake: Traditional Irish Baking with Modern Twists

Graham Herterich runs a Dublin bake shop. Known on Instagram as @thecupcakebloke, he’s comfortable with traditional Irish baked goods, but can also draw in influences from elsewhere, as demonstrated in this small handsome book.

You’ll find his versions of classics such as soda bread, barmbrack, sausage rolls and rhubarb crumble here. But just as often you’ll come across Herterich’s own ideas. 

For example, a version of soda bread flavored with panch phoron, and Indian five-spice blend. There’s a miso and sesame sandwich loaf, and a toffee apple caramel pudding enriched with Korean doenjang paste for an umami boost.
