Profiles and brief interviews of twenty different wine makers and merchants reveal different aspects of the wine and the philosophies behind its production. These are grouped regionally, but the influence of the Emilian city of Modena seems dominant. No apologies are made for the wine's abundance or its versatility, qualities that were praised as long ago as the Roman Republic.
